It is a non-disease focused guide to food that connects the relationship between food and health for the general consumer. While information on micro and macronutrient function is presented, the material largely focuses on specific food items, their use, history, and nutrient content.
Purpose: The purpose is to provide knowledge that supports individuals in making well-informed decisions. The book focuses on the relationship between healthy eating and disease prevention, and follows general guidelines for healthy eating in all lifestages. The encyclopedia presents information that is available elsewhere in many forms; however, it is formatted for general consumers rather than students or professionals in health fields and provides more comprehensive information than the variety of cookbooks that offer similar information.
Audience: The book is written for general consumers with little knowledge of nutrition. Rather than focusing on clinical and academic details, the book provides general information on nutrition and health in a user friendly form. The group of authors include knowledgeable individuals from a variety of fields, lending a balanced approach to the information.
Features: The encyclopedia presents information on improving health, and the interaction of food and health. Specific foods (a large variety) are discussed in detail, and recipes are provided to promote health based on premises presented in the book. Nutrient analyses of recipes are provided. Color photographs and diagrams are used well in this attractive book, improving readability with eye-catching but not distracting figures. Important points and tables that present ideas in a simple, understandable format are separated using light background printing. Some interesting discussions are included regarding controversial topics (i.e., FDA approval of food substances) and topics of consumer interest (i.e., what labels mean, how to interpret labels for individual use).
Assessment: This is a unique combination of food sources, nutrition information, and health-nutrition interactions. The book intends to provide knowledge for individuals to influence their health and provides sections to help people make positive diet changes.
